For those out there interested......

Did you know that Vegemite was first invented by a chemist in 1922? It was designed to use up the leftover yeast that was being dumped by breweries! Originally it was labelled “pure vegetable extract” however, it didn’t sell very well. Synthetic B vitamins were added to boost sales.

Okay, so what you say. What's wrong with synthetic vitamins?

They are not absorbed by the body the same as vitamins from whole foods.
More progressive countries actually prohibit selling food fortified with vitamins as they know it can be very dangerous to the majority of people.

We definitely had a few speed bumps along the way but I am so happy to finally have these boxes packed, shipped and heading to you!

This is my first business ever, so seeing these boxes leave my hands and make their way to you feels incredibly special. There’s been a lot to learn along the way, but I’m so proud of how warmly Zero Gluten has been received already.

Chocolate Cupcakes with EveryMite

Ingredients:
Cupcake:
- 200g fresh dates, soaked in boiling water
- 2 tbsp maple syrup
- 2 tbsp extra virgin olive oil
- 100g avocado
- 2 eggs
- 1 tsp vanilla extract
- 225g self-raising flour (or use gluten-free flour)
- 50g cacao powder
- 1/2 cup milk of your choice

Avocado frosting:
- 100g avocado
- 25g cacao powder
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp Reduced Aussie Salt EveryMite

Directions:
1. Preheat oven to 180°C. Grease cupcake tins with some coconut oil.
2. Process date mixture, maple syrup, oil, avocado, eggs and vanilla in a food processor until the mixture is smooth.
3. Sift the flour, cacao powder and salt into a large bowl. Add the avocado mixture and milk. Add some more milk if the mixture is too thick! Fold until just combined.
4. Transfer to the prepared cupcake tins and smooth the surface of each.
5. Bake for 20 mins or until a skewer inserted in the centre of the cupcake comes out clean.
6. Set aside in the pan for 10 mins before turning onto a wire rack to cool completely.
7. To make the frosting, place the avocado, cacao powder, maple syrup, vanilla, EveryMite, and salt in a food processor and process until combined and smooth. Spread over the top of the cake.
8. Top with chocolate-covered chickpeas or nuts!

Chickpea 2-Ways on Toast • by

Chickpea eggs?
You vegans are truly groundbreaking... who would have thought that you could reinvent the humble vegan egg beyond tofu

Served with some hummus and sautéed vegetables - seasoned to the T with olive oil, chilli flakes and salt and pepper - this is a fab quick lunch fix

dEATS:

- 1/2 cup Chickpea Flour
- 1/2 cup Soy Milk
- 2 Tbsp Nutritional Yeast
- 1/2 tsp Turmeric
- 1 tsp Dijon Mustard
- 1/2 tsp Garlic Powder
- 1/4 tsp Black Salt
- 1/4 tsp Onion Powder

1. Whisk all the ingredients together until well combined. The mixture should be the consistency of pancake batter
2. Heat a medium nonstick pan over medium heat with 1 tablespoon of oil. Add the chickpea egg batter and cook, mixing often, until the mixture reaches the consistency of scrambled eggs (4-6 minutes).
3. Serve on some sourdough (I used Rye and Spelt ) slathered with , hummus, & your sautéed vegetables (mushrooms and zucchini ribbons for moi 🥰)

FYI we use Coconut Aminos in EveryMite.
BuT WhAt aRe ThEY?....

Recipe by ⁠

GF | DF | RSF | VE⁠

What you need:⁠
1/2 cup rice flour ⁠
1/4 cup pumpkin seeds⁠
1/4 cup sunflower seeds⁠
1/4 cup h**p seeds⁠
2 tbsp black poppy seeds⁠
2 tbsp white sesame seeds⁠
2 tbsp psyllium husk⁠
2 tbsp Braggs nutritional yeast⁠
2 tbsp olive oil⁠
1 tsp salt⁠
1 tsp oregano ⁠
1/2 tsp onion powder ⁠
1 cup boiling water ⁠

How to:⁠
1. Preheat oven to 170C and line a large baking tray with baking paper.⁠
2. In a mixing bowl combine all ingredients, then add water.⁠
3. Let mixture sit stirred for 5 minutes. ⁠
4. Transfer mixture between two pieces of baking paper and roll out until thin. ⁠
5. Transfer to baking tray.⁠
6. Cook in oven for 20 minutes.⁠
7. Remove and slice into bars.⁠
8. Return to oven for 5-10 minutes.⁠
9. Enjoy with
