I have been producing and selling fresh pasta organic from almost a year. I love the feed back and the love from peoples around Cairns it reminds me of when I first came here.
I did work in many restaurants around here back in the 90 and some like villa romana or donnini’s had an open kitchen and I used to love working in the middle of people, that’s when I discovered that people’s remember my face easily and they quickly associate it with food. One customer once came to me and said :”when I see your face I always have good food “ I think was the best compliment I ever received in the hospitality.
In 2002 I went back to Europe and I started working in real estate and I used all of this, and people were associating my face with real estate for sale.
In 2014 I came back here and for around 10 years I spent time gardening and climbing coconuts tree. That was like meditating too (like pasta) because I had to be in the present. I discovered how noisy and nasty our mind is and learned to calm it down (not easy) …
Last year I was feeling tired and I decided to start producing fresh organic pasta made only from cert org Australian semolina and distilled water.
I quickly discovered that is still hard to get good products up here so i started to order the organic Australian semolina online, from the Gold Coast.
The flour have a beautiful texture and flavour and I felt in love with it.
I ordered a pasta machine from Italy with bronze excursion and 4 type of pastas:
Fettucine , spaghetti, Mac and spirals
I usually sell it in 1kg bag, almost dry, for $20/kg.
