Australian cherry

NSW, Victoria and Tasmania are the largest cherry growing states producing in excess of 4,000 tonnes each per year. Over 80 different cherry varieties are grown throughout Australia.

Cherry season start from Oct/Nov, people can enjoy Aussie until Feb next year (ONLY less than 5 months).
Tasmania has the shortest harvest time, around 2 months.

Now is the perfect timing to enjoy the freshness of cherries😋😋😋

Sha Shen Yu Zhu Nourishes Yin and moisturises lung soup pack

Perfect to cook with meat, like quail, partridge, chicken, silky chicken, pigeon, pork tenderloin or pork ribs (Chinese cut)

Ingredients: sea coconut, Sha Shen, Yu Zhu, dried lotus seeds, bitter and sweet almonds, dried figs, dried jujube, Goji berries and candied dates

Method:

-Rinse all ingredients from soup pack.
-Clean, scald, rinse and drain meat.
- Pour 12 cups of water in a pot. Put all ingredients in the pot and bring to boil. Turn to low heat and simmer for 1.5 hours. Season with salt.

Functions: tonifying spleen and strengthening stomach; moisten the lung and enrich yin; clearing heart and tranquillisation

蕃茄和牛尾湯 (乍暖還寒最啱食)
準備+烹煮時間 2小時
三到四人份

材料:
和牛尾 🐮1公斤
甜粟米🌽 1條
蕃茄🍅 1公斤
薯仔 🥔 1個
蕃茄膏 🍅1罐
洋蔥 🧅 1個
蒜瓣🧄 2粒
薑片 4片
八角 1粒
香葉🌿 3片
迷迭香 適量

做法

1. 和牛尾冷水下鍋加入料酒,薑片飛水,過冷河,瀝乾水分。

2. 粟米,洗淨切小段;蕃茄,洗淨切小塊;馬鈴薯去皮,洗淨,切粒;洋蔥去衣,切粗粒。

3. 用㕑紙印乾和牛尾水份,防濺油。

4. 用一大深鍋,熱油,落和牛尾及迷迭香,中大火將兩面煎成金黃色。

5. 加熱水(水沒過和牛尾),加香葉,薑片煲滾,加蓋轉中小火燉1.5小時。

6. 當和牛尾燉到50分鐘,取另一個煎鍋落油,將洋蔥,蒜煸出香味,然後將蕃茄加入一起翻炒到所有材料混合。加入茄膏上色增香。

7. 待和牛尾燉煮至一小時,加入所有配料,充份融合。加入適量鹽和黑椒調味。

8. 加蓋燉煮多30分鐘至蔬菜全部軟糯。

9. 配上白米飯🍚開餐喇喂😋😋

Tomato Waygu oxtail soup

Preparation and cooking time: 2 hours
3-4 people serve.
Ingredients
1kg……………….. Wagyu oxtail
1 cob……………. sweet corn
1 kg ……………… tomato
1 …………………… potato
1 tin ………………. Tomato paste
1 …………………… onion
2 cloves ………… garlic
4 slices…………... ginger
1……………………. Star aniseed
3……………………. Bay leaves
2……………………. Rosemary

Method:
1. Blanch the wagyu oxtail in cold water pot, add cooking wine and ginger slices, bring to boil.
2. Wash and cut corn into small segments, diced tomatoes, onion, and potato.
3. Dried the oxtail with kitchen towels.
4. Heat oil in a large Dutch oven and sear the oxtail sections over medium-high heat until browned with rosemary for the best aroma.
5. Add boiling water (enough to cover all the oxtail), add two slices of ginger and bay leaves, until it boils, cover and simmer for 1.5 hour.
6. Get another cooking pan, heat oil and stir-fried onion and garlic, then add tomato and tomato paste to stir-fried together to get the best taste and color.
7. When the oxtail is cooking for 1 hour, add all the cooked vegetables to the pot, mix well. Season with a pinch of salt and pepper.
8. Cover and simmer with medium-low heat for 30 minutes until vegetables are tender.
9. Best to serve with rice

Pork shank soup with sweet corn and carrot (for 3-4 ppl serve)

Ingredients:
350g……………. pork shank
2L…………….…… water
3…………………... carrot
2 cobs……………. sweet corn
30g………………… sweet and bitter almonds
3……………………. candied dates
4……………………. dried scallops
Method
1. Blanch the pork shanks in boiling water. Peel the carrots, then cut them into pieces. Remove the leaves of sweet corn, wash and cut into short segments.
2. Soak the sweet and bitter almonds in water for 20 minutes.
3. Put all ingredients into a pot. Add 2 liters of water. Bring to boil. Turn to low heat and simmer for 2 hours. Season with a pinch of salt. Serve both the soup and solid ingredients for the best taste.

1. 將所有材料洗乾淨,甘筍及粟米切大塊。 其實煮湯的話用紅蘿蔔會比較軟淋和甜,但我跟我家的寶寶都比較喜歡甘筍的味道,所以就改用了甘筍,味道一樣清甜�
2. 先煲滾一鍋水,水滾後放入豬𦟌灼約30秒後撈起備用。 用豬肉煲湯一定要汆水啦,將肉類放入水中快燙,去除血水、雜質、油脂及羶腥味。你們有試過煮湯、吃火鍋時在湯面出現一層灰白色的凝固物嗎?那就是肉類的雜質,如果肉類經汆水的話,湯水就會清澈無羶味。 豬骨牛骨血水多、異味重,宜用凍水汆水,慢慢升溫,水滾時就能逼出油脂、血水。豬骨較適合煲老火湯,能讓豬骨內的骨髓香味滲出。 不帶骨的肉類如豬𦟌、瘦肉,宜用滾水汆水,清除表面雜質且保留鮮味。. �
3. 將所有材料及2公升冷水放入大鍋中,用大火煲滾,再轉小火煲兩小時。最後用鹽調味。
