Fresh unload from one of the country’s finest fishermen 😍🙌🏼 Josh Lewis from Josh Lewis & L A C A S I T A

We are lucky to be fully loaded this weekend with his Pearl Perch & Knobby Snapper, caught offshore of Brunswick Heads, Northern NSW 🎣

Josh’s love and respect for seafood is demonstrated in his fishing methods with every single fish line caught one by one, then brain spiked(Iki Jime) and bled and into an ice slurry 🙌🏼 This is the gold standard to ensure the highest quality, texture and flavour.

We are proud to be working with local fishermen like Josh to bring you the best quality fish!

Watch the traditional art of breaking down a premium wild Bluefin tuna before enjoying freshly prepared nigiri by Shimpei Raikuni San of Sushi Room, showcasing the very best cuts at their absolute freshest. Guests can also indulge with optional premium uni and caviar add-ons.
