It's amazing for how long wasabi rhizome can be stored in your fridge. If you keep it in a zip lock bag, but dry and with petioles removed so it doesn't rot, it will keep for several months, keeping it's flavour too. When you want to use it, take a sharp knife and carefully remove the outer surface of the part that you want to grate ...but remember most of the wasabi flavour is near the outside of the rhizome so do go ever so easy when you do this.
