This is what honey looked like before anyone thought to filter it. ๐ฏ
No extraction. No processing. No contact with equipment. Just raw comb, straight from the hive - built directly into the cassette by our bees, wax cells still sealed, exactly as the bees left them, untouched by human hand.
A few things worth knowing about it:
๐ It's the oldest way humans have ever eaten honey
๐ No two cassettes taste the same โ the flavour shifts with whatever the trees were flowering that season
๐ The wax is entirely edible โ it softens naturally as you chew
๐ Harvested right here in Western Australia, in one of the only Varroa-free beekeeping regions left in Australia
How to serve it: straight onto a cheese board with aged cheddar, manchego or fresh ricotta, sourdough, and sliced pear or fig. Room temperature, never the fridge โ cold honey crystallises and loses that soft, cuttable texture.
