Soulistic Bone Broth Cacao Marshmallows

Ingredients

* 16 g gelatin
* 200 ml water (divided)
* 100 g honey
* 20 g Soulistic
* 1 tsp vanilla extract
* 100 g dark chocolate
* Flaky sea salt, to finish

# Method

1. Bloom the gelatin:Sprinkle the gelatin over 100 ml cold water and leave for 5–10 minutes to bloom.
2. Make the syrup:In a small saucepan, combine the remaining 100 ml water, honey, Soulistic and vanilla extract.
3. Place over medium heat, whisking until smooth. Bring to a gentle boil, then immediately remove from the heat.
4. With a stand mixer or hand mixer running on low speed, slowly pour the hot mixture into the bloomed gelatin.
5. Increase to high speed and whip for 6–8 minutes, until the mixture is thick, glossy and fluffy.
6. Immediately pour into a lined or lightly greased tray and smooth the top. Refrigerate until completely set.
7. Melt the dark chocolate.
8. Cut the marshmallow into bite-sized squares, dip each piece into the melted chocolate and place onto a lined tray.
9. Sprinkle with flaky sea salt and refrigerate until the chocolate has fully set.

Top Tip: Don’t over-whip the marshmallow mixture. Stop once you reach soft peaks it should still slowly ribbon off the whisk. If you whip it until it's’too stiff, it will be difficult to spread into the tray and the finished marshmallows won’t be as light and fluffy.
