Getting ready for the week ahead 💪🏼

Chia puddings are the easiest, high protein meal prep breakfast.

Recipe by :

1/2 cup raspberries fresh or frozen
2 tbsp chia seeds
1/2 cup of milk of choice
1/2 cup plain greek yogurt
2 tsp honey

After one hour of sitting in the fridge, give it a mix. This will help thicken it up then leave in fridge overnight.

Serve with fresh fruit and toppings of your choice like coconut and granola 😋

These granola bars are super easy, yummy and only have 7 ingredients 👍🏻

INGREDIENTS ⁣

▪️2 cups oats ⁣
▪️1/3 cup desiccated coconut⁣
▪️1/4 cup pumpkin seeds⁣
▪️1 tbsp chia seeds ⁣
▪️1/3 cup peanut butter ⁣
▪️1/4 cup maple syrup/agave syrup ⁣
▪️2 tbsp coconut oil ⁣

Optional: chocolate chips ⁣

METHOD ⁣

▪️Preheat oven to 160c⁣
▪️Heat the maple syrup, peanut butter and coconut oil together in a saucepan over medium heat. Stir until the mixture is smoothly combined. Remove from the heat and let it cool. ⁣
▪️In a large bowl add all the remaining ingredients. Then add in the peanut butter mixture (ensure cool as it will just melt the chocolate chips). Mix really well.⁣
▪️Pour mixture into a prepared dish. Press the mixture firmly into the tin so it’s tightly packed together. ⁣
▪️Bake for 15-20 minutes or until golden.⁣
▪️Make sure you wait until the bars have completely cooled before you slice them (you can pop them in the fridge). ⁣

INGREDIENTS

▪️15 medjool dates, pitted
▪️1 cup warm milk
▪️1 and 1/2 cups plain flour
▪️1 tsp baking powder
▪️1 tsp bicarbonate of soda
▪️2 eggs
▪️1/2 cup walnuts, chopped
▪️Chocolate chips (optional)

METHOD

▪️Preheat oven to 180c
▪️Add the dates and warm milk together in a bowl. Leave aside for 20 minutes until your dates are soft, then blend
▪️To the blended date mixture, add the remaining ingredients
▪️Pour batter into a prepared loaf tin and spread evenly
▪️Top with walnuts and chocolate chips (optional)
▪️Bake for 30-35 minutes or until a toothpick comes out clean
