Cherry pie 🥧
Prepare a juicy dessert that will be a wonderful addition to your cosy family tea parties ☕️✨
Ingredients:
🧈 230 g butter
🌾 350 g flour
🍚 30 g sugar
🧂 a pinch of salt
🥚 egg
💧 4 tbsp ice water
🍒 850 g cherries (frozen cherries can be used)
🍬 100–200 g sugar (depending on the acidity of the cherries)
🌼 10 g vanilla sugar
🌽 60 g cornflour
Preparation:
1️⃣ Pour the flour onto a work surface, place the diced cold butter on top and chop the flour and butter with a spatula until crumbly.
2️⃣ Transfer the crumbs to a bowl, add sugar, salt, egg and ice water. Knead the dough. It is better to knead it with a spatula so that the butter does not melt from the warmth of your hands and the pastry does not turn out hard.
3️⃣ Divide the dough ball into two parts (2/3 and 1/3). Transfer the dough to bags or cling film and refrigerate for 30 minutes.
4️⃣ Prepare the filling — place the cherries, sugar and starch in a saucepan. Place over medium heat and bring the mixture to a thick consistency, stirring constantly with a spatula. Cover the finished filling with cling film and set aside to cool.
5️⃣ Grease a baking tin with butter. Roll out 2/3 of the dough into a layer, then roll it onto a rolling pin to make it easier to transfer to the tin. Form the base of the pie and remove any excess dough. Place the filling in the tin and spread it evenly.
️⃣ Roll out the smaller part of the dough and cut it into strips. Intertwine the strips, for example, into braids, and brush them with a mixture of egg yolk and milk.
7️⃣ Bake the pie in an oven preheated to 200 °C for 40–50 minutes, until it is golden brown. It is best to let the pie cool slightly (about 30 minutes) so that it is easier to cut and does not fall apart.
8️⃣ Serve warm with a scoop of white ice cream. This will create an incredibly delicious combination of flavours. Try it!
