Greek Chicken Marinade
Ingredients
• Chicken – 500 g
• Olive oil – 3 tbsp
• Lemon juice – 2 tbsp
• Garlic – 4 cloves (minced)
• Dried oregano – 1 tsp
• Paprika – 1 tsp
• Salt – 1 tsp
• Black pepper – ½ tsp
• Greek yogurt – 2 tbsp (optional for tenderness)
Method
1. Mix olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and yogurt.
2. Coat chicken with marinade.
3. Marinate 1–4 hours (or overnight).
4. Grill, bake, or pan-cook until done.
Flavor: Fresh, lemony, herby
Honey Mustard Chicken
Ingredients
• Chicken – 500 g
• Honey – 3 tbsp
• Dijon mustard – 2 tbsp
• Garlic – 3 cloves (minced)
• Olive oil – 2 tbsp
• Lemon juice – 1 tbsp
• Salt – 1 tsp
• Black pepper – ½ tsp
• Paprika – ½ tsp
Method
1. Mix honey, mustard, garlic, olive oil, lemon juice, and spices.
2. Coat chicken thoroughly.
3. Marinate 30 minutes–2 hours.
4. Bake or grill until golden.
Flavor: Sweet, tangy, slightly spicy
Tandoori Chicken
Ingredients
• Chicken – 500 g
• Yogurt – 1 cup
• Lemon juice – 1 tbsp
• Ginger garlic paste – 1 tbsp
• Tandoori masala – 2 tbsp
• Kashmiri chili powder – 1 tsp
• Turmeric – ½ tsp
• Salt – 1 tsp
• Oil – 1 tbsp
Method
1. Mix yogurt, lemon juice, ginger garlic paste, spices, and oil.
2. Make small cuts in chicken and coat with marinade.
3. Marinate 4–8 hours (overnight best).
4. Grill, bake at 200°C for 25–30 minutes, or cook in pan.
Flavor: Smoky, spicy, aromatic
Chef Tip:
For juicy chicken, marinate at least 1 hour, but overnight gives best flavor.
