We’ve just brought in Japanese A5 Wagyu Striploins — BMS 12, featuring an absolutely incredible level of marbling. Just look at these steaks. 👀🥩

BMS (Beef Marbling Standard) is the Japanese scale used to assess the amount and quality of marbling in beef, running from 1 to 12.

And these are BMS 12 — the very top of the scale.

That extraordinary marbling is what gives Japanese A5 Wagyu its signature experience: incredibly rich flavour, exceptional tenderness and fat that begins to melt at a relatively low temperature. This isn’t the kind of steak you need 16 ounces of — a smaller portion, sliced and shared, is the way to experience it.
