Maybe I’ve posted this recipe before but it is the season!

Rhubarb Pie Filling Squares
(Fits into large Costco cookie sheet, for 9x13 cut recipe in half)

1 1/2 cups butter
2 1/4 cups sugar
5 eggs
4 1/2 cups soft white flour
1 1/2 tsp baking powder
3/4 tsp salt
1 1/2 tsp vanilla
Cream butter and sugar. Add eggs one at a time . Add flour and rest of ingredients. Line pan with parchment paper. Drop out 3/4 of batter in small clumps all over bottom and spread out in even layer. Save 1/4 of batter for topping. This batter will be thick

Make filling:
1 1/2 cups water
1 1/2 cups sugar
4 1/2 T cornstarch
4 1/2 T jam or corn syrup
1 1/2 tsp vanilla
6 cups chopped rhubarb

Whisk together water, sugar and cornstarch. Cook until thickened in saucepan on medium heat. Take off heat and add jam and vanilla. Pour over batter.

Top off with remaining batter in small chunks. Bake at 325 for 1 hour.

When completely cooled this can be drizzled with glaze.

Tortillas are in the freezer, bread mix and all purpose mix in the fridge, Outback local honey is on the shelf along with organic teas and Star City coffee. Sweet Ole Farm bar soap is also available.
