This Father’s Day, give Dad something he’ll actually get excited about — a premium Top Sirloin Cap (Picanha), one of the most flavourful cuts of beef you'll find on the grill.

Known for its rich beef flavour and signature fat cap, picanha is a favourite among barbecue enthusiasts for good reason. It's tender, juicy, and perfect for a weekend cookout with family and friends.

How to Cook the Perfect Picanha (Reverse Sear Method)

✅ Score the fat cap in a crosshatch pattern.
✅ Season generously with your favourite dry rub.
✅ Cook fat-side up in a smoker or oven at 225°F until the internal temperature reaches 115°F.
✅ Sear over maximum heat on the BBQ or in a hot pan for 2–3 minutes per side. (Watch for flare-ups from the fat cap!)
✅ Rest under foil for 10–15 minutes.
✅ Slice into ¾-inch steaks and serve.

This method produces a beautiful medium-rare finish. Prefer it more done? Simply cook to a higher internal temperature before searing.
