Free Wolf Pastries - The Back Story

Free Wolf Pastries was founded in the summer of 2016. It was started in the local markets, and has grown to a year round bakery.

Many people have asked about the name, whether the items are free, or what are wolf pastries? The name comes from me, the owner, Danielle Racine. I spent 2 years in Le Cordon Bleu, graduating with a degree in Patisserie and Baking. During my time at school I was known as the odd ball, or the lone wolf, going my own way for recipes and decorations, generally ending up with things no one had seen, but that somehow worked. This earned me the nickname Wolf. When I graduated I decided to go my own way, away from the general idea of baked goods that are in stores now, away from things that were common. I was finally free to explore any and all recipes I wanted, as well as to design anything under the sun. While it may seem odd, this is where the name Free Wolf came from, it pays homage to me, the same as naming a company after a child or relative.

This is what now drives me to create new and tasteful recipes, especially those that focus around dietary restrictions such as Celiac disease, lactose intolerance, and veganism. Free Wolf Pastries specializes in gluten-free, dairy-free, and vegan baked goods that taste great, and have a good feel to them. In addition to specializing in these baked goods, I also focus on making special days even more special with personally designed cakes, cupcakes, and other items for all celebrations.
