This batch of our dehydrated lime wheels was my favourite yet: 60°C for 14 hours — slow, low, and absolutely worth the wait.
I’d previously been dehydrating our limes at 65°C for about 14½ hours, and they were getting a little darker and developing more of that cooked, almost-burnt bitterness.
So I changed one variable: temperature.
And THIS is why dehydration is actually a little bit of food science! Lower-temperature drying can help reduce heat-related browning and preserve more of citrus’s colour, flavour and aromatic compounds. Research on dried citrus has similarly found 60°C to be a particularly useful temperature for balancing moisture removal with quality, while increasing temperature can accelerate colour deterioration and changes in flavour.
The goal isn’t to cook Lady Lime.
It’s to gently remove the water while leaving behind everything that makes her fabulous. 🍋🟩✨
