Fresh mozzarella is a race against the clock. As soon as it is shaped it goes straight into cool brine to firm up and hold, and from there the sooner you eat it the better it tastes.

This batch is only minutes old, made the same day in our Bali cheese room. Keep yours in its liquid until the last minute, and let it come up to room temperature before it hits the plate.
