A LOT of micro-lots -

• At lot we roast our own specialty coffee. Many of the bags we buy are usually micro lots, and we try to take the coffee on a trip throughout the country. We have had coffee from Jaén, the most popular coffee area in Peru, to cafes from Puno where you can still find wild coffees, such as the so-called “Quechua and Aymara Coffee of Peru” because they belong to natives who speak in traditional Inca languages.

We roast in the Bullet max 800gr depending on the fermentation profile. Right now we have three; washed, honey and natural.

So drink a LOT of coffee

• En Lot tostamos nuestro propio café. Muchos de los sacos que compramos suelen ser microlotes, e intentamos hacer con el café un viaje por todo el país. Hemos tenido cafés de Jaén, la zona cafetera más popular de Perú, hasta cafés de Puno, donde aún se pueden encontrar cafés salvajes, como los llamados “Café Quechua y Aymara de Perú” por pertenecer a nativos que hablan en idiomas tradicionales incas.

Tostamos en las Bullet max 800 g dependiendo del perfil de fermentado. Ahora mismo contamos con tres; lavado, honey y natural.

• It is and has always been discredited or seen as something negative when developing a cocoa profile. The point is that this is not the case, cocoa butter is the fat of the cocoa bean, and as with the olive, it is extracted in the same way.

Within the cocoa profiles that we work with in LOT, there are cocoa beans that naturally have up to 42% fat. At LOT we make many products with cocoa fat, replacing butters or oils.

Es y siempre ha sido desacreditado o visto como algo negativo a la hora de elaborar un perfil de chocolate.

La cuestión es que esto no es así, la manteca de cacao es la grasa de la semilla del cacao, y al igual que ocurre con la aceituna, se extrae de la misma forma. Dentro de los perfiles de cacao que trabajamos mucho, hay cacao en grano que de forma natural tiene hasta un 42% de grasa.

En LOT elaboramos muchos productos con grasa de cacao, sustituyendo mantecas o aceites.

As you may know, we roast microlots of coffee but we also share in our space coffee from different coffee roasters that we like, it’s been a while since we last shared our space so it’s time to recap, but this time our goal is to share not only Spanish roasters but from different places in Europe, if you have someone in mind who wants to share with us, let us know, the only requirement is that they be of Peruvian origin.

Como sabrán, tostamos microlotes de café pero también compartimos en nuestro espacio café de diferentes tostadores de café que nos gustan, ha pasado un tiempo desde la última vez que compartimos nuestro espacio, así que es hora de recapitular, pero esta vez nuestro objetivo es compartir. no solo tostadores españoles sino de diferentes lugares de Europa si tienes alguien en mente que quiera compartir con nosotros háznoslo saber, el único requisito es que sea de origen peruano.
