In the Netherlands, mushroom farming is going vertical—literally—using tall columns made from recycled egg cartons instead of plastic trays or grow bags. Farmers compress and stack the cartons into breathable towers that stretch from floor to ceiling. The material holds moisture, lets fresh air circulate, and naturally keeps pests at bay, which cuts down on chemical sprays. Spores settle into the porous surface and sprout in conditions mushrooms prefer: dark, cool, and consistently damp. Because each column is fully compostable, the setup stays low-waste from start to finish and is easy to maintain.

These “mushroom towers” fit inside old shipping containers, empty warehouses, and other unused urban spaces, making it possible to grow a lot in a very small footprint. Oyster, shiitake, and lion’s mane varieties do especially well, whether paired with hydroponic systems or organic substrates enriched with coffee grounds and plant scraps. Water use is minimal, plastic is avoided, and yields are high. It’s a clear example of circular farming—turning everyday waste into a growing resource while squeezing more value from every square meter. By transforming humble egg cartons into productive vertical gardens, Dutch growers show how simple materials can power clean, scalable food production.
