It’s Taco Tuesday AND Cinco de Mayo today! I have a few of my favorite recipes here for you to make and enjoy. Simple, super flavorful, fun and if you have never made homemade guacamole please use this recipe and then never purchase it again (because it’s SO easy and SO good!)

10 minute, everything bagel, PROTEIN BISCUITS are here 🙌🏻 I love these to have with soup, salad, breakfast, even with a little cucumber and smoked salmon for lunch! Easy to make and easy to bake- make these tonight!

PROTEIN DROP BISCUITS
-1 c full fat Greek yogurt
-1/2 c. almond flour
-1/2 c. Gluten free all purpose flour
-2 eggs
- 1 Tbsp baking powder
-1/2 tsp salt
-everything bagel seasoning, to top

DIRECTIONS
1. Line a baking sheet with parchment and preheat oven to 375.
2. Mix everything but the everything bagel seasoning in a medium sized bowl until well mixed.
3. Scoop into 6-8 portions and gently roll with damp or oiled hands. Sprinkle with plenty of everything bagel seasoning.
4. Bake for 12-14 minutes until lightly golden. Enjoy warm!

High Protein Cookie Dough is my new obsession….especially now that I have a protein powder that doesn’t upset my tummy!

I keep a little jar of this in my fridge for a sweet treat that also has fiber and protein! If you have avoided protein powder because they upset your tummy or just are full of too much junk please try .co !!
(1) it tastes so good
(2) my favorite peanut butter chocolate flavor has only 4 ingredients! Almond protein, peanut protein, cocoa powder and monkfruit. Simple and delish!!

HIGH PROTEIN COOKIE DOUGH
-1 c finely ground almond flour
-2 Tbsp gluten free oats
-1 c cottage cheese
-1 tsp vanilla extract
-3 or 4 Tbsp maple syrup, to taste
-2 scoops your favorite .co protein powder
-big pinch flaky sea salt
- 1/2 c favorite super dark chocolate chips

Directions
1. Add everything but the chocolate chips to a food processor and let it run about 1 minute until it’s nice and creamy.
2. Add the chocolate chips and pulse to blend.
3. Enjoy!

***note- I tried this with the Costco almond flour and it wasn’t fine enough, be sure you purchase a finely ground almond flour without the skin!

Day two was for my favorite walk in London from Mayfair to Notting Hill through the parks…and the blooms were blooming! 🌷

This long walk is entirely through gorgeous parks and you’ll forget it takes an hour to get from one neighborhood to the other this way. Start in Green Park in front of Buckingham Palace through Hyde Park-Princess Diana’s Gardens (you can stop for a coffee at at the Serpentine)-onto Kensington Gardens (where I caught some Buckingham horse practicing!) past Kensington Palace and then a few blocks to an adorable part of Notting Hill: Westbourne for my fix of , and Ottolenghi’s deli. Many more cool shops here (no need for Portabello Road!) to spend the afternoon at.

A walk back through the rain and we had to quickly get ready for our early dinner at which was, of course incredible. Gluten free fried teeny mushrooms, battered celery root that was light and crispy on the outside and silky smooth on the inside with so many exceptional sauces and herb garnishes, a gorgeous pork chop and homemade lemon liquor from the peels of the lemons they use.

Brisk walk to the theater for a fantastic play about CA Lewis in an incredibly charming theater (where they serve ice cream during intermission!) and finally a wine bar en route to our hotel to finish it up ❤️

I recently spent a long weekend in London visiting my niece and we walked to all the places, ate all the things, popped into museums and even snuck in some theatre.

Stay tuned for all the details! Day one was a short one after a 5 1/2 hour delay en route, so after a sweet stroll through Green Park it was time for dinner! We popped over to for one of our favorite meals of my visit. Delicious gluten free bread, awesome info about GF safe things on the menu including spring white asparagus with French ham and hollandaise, perfect braised rabbit, simple potatoes and a bright salad with loads of chives. Wine service is perfect and not snobby in the least bit. I love it there so do yourself a favor and book a table in this charming Mayfair spot!
