How to cook the perfect Christmas ham 🎄

Ready to impress your guests this Christmas with a delicious, tender ham? Here's a foolproof way to cook your dry-cured ham that'll have everyone coming back for seconds:

1️⃣ Start with a soak
Pop your ham in a large stockpot, cover it completely with cold water, and bring it to a boil for 5 minutes. Now, discard that water and refresh the pot with cold water.

2️⃣ Add some flavour
Toss in some onions, carrots, bay leaves, and a few peppercorns. Bring to a boil, then let it poach gently for 25 minutes per pound (plus 30 mins). Don’t forget to check with a temperature probe—it should hit 75°C inside!

3️⃣ Time to glam up your ham
Once cooked, remove the rind (keep that juicy fat on), and score it into a criss-cross diamond pattern. Mix up a glaze with equal parts muscovado sugar, dry mustard powder, and marmalade (add a splash of whiskey for some festive cheer 🍹).

4️⃣ Glaze & roast
Pat the glaze onto your ham and pop it in the oven at 200°C for about 5 minutes per pound—keep an eye on it, you want to melt the glaze, not burn it!

5️⃣ Serve hot or cold
Slice it hot with parsley sauce or cool it down to serve with a fruity chutney. Either way, your Christmas ham will be the star of the table! 🎅
