Here's a recipe which can be made with our new and delicious roasted Almond Butter !

Creamy Lemon & Almond Butter Linguine

*(Serves 2–3 | 20 minutes)*

# # # **Ingredients**

* 250 g dried linguine or tagliatelle
* 3 tbsp plain roasted almond butter
* 2 tbsp extra-virgin olive oil
* 1 small garlic clove, finely minced
* Zest and juice of 1 lemon
* 200ml pasta cooking water (reserved)
* A small bunch flat-leaf parsley, chopped
* Salt & freshly ground black pepper
* (Optional) Grated Parmesan or vegan “Parmesan”

# # # **Method**

1. **Cook the pasta** in a large pot of salted boiling water until just al dente. Reserve 200ml of the starchy cooking liquid, then drain.
2. Meanwhile, in a large bowl, **whisk together** the almond butter, olive oil, minced garlic, lemon zest, and lemon juice. It’ll be thick at first.
3. **Add 2–3 tbsp** of the hot pasta water to the bowl and whisk until you get a smooth, creamy emulsion. Season with salt and plenty of black pepper.
4. **Toss the drained pasta** into the sauce, adding a some more pasta water if needed so every strand is luxuriously coated.
5. Stir through most of the parsley, then **pile onto warmed plates**.
6. Finish with the remaining parsley, an extra twist of black pepper, and (if using) a light dusting of Parmesan.

Here's a copy of our own spaghetti recipe in which you can use our delicious Pistachio butter in !

Pistachio Butter Spaghetti
Ingredients:
• 250g spaghetti
• 2 tbsp pistachio butter
• 2 tbsp mascarpone cheese
• 1 tbsp olive oil or unsalted butter
• 1 tsp freshly ground black pepper
• Salt, to taste
• Crushed pistachios, for garnish (optional)
• Honey, for drizzling (optional)
• Grated aged cheese like Parmigiano-Reggiano (optional)
Instructions:
• Boil Water:
Bring a large pot of salted water to a boil. This will be used to both cook the pasta and loosen the sauce. Keep it hot and nearby.
• Toast Black Pepper (1 minute):
In a large frying pan over medium heat, toast 1 teaspoon of freshly ground black pepper for about 30–60 seconds, until fragrant. Do not burn.
• Make the Base Sauce (2 minutes):
Add pistachio butter, mascarpone, and olive oil or butter to the pan. Stir gently until melted and combined. Add about 1/2 cup of the hot pasta water to loosen the mixture slightly.
•Add the dry spaghetti directly into the sauce and immediately start adding 1/2cup at a time of hot pasta water. Cook on medium-heat, keep stirring and turning frequently to prevent sticking, and continue adding more water until pasta is el dente .
• Season & Finish:
Taste and season with sea salt. Optionally, add a drizzle of honey and a generous grating of dry aged cheese. Stir to combine.
• Serve:
Plate immediately. Top with crumbled pistachios for texture and garnish. ---
