Acidity affects the texture and flavour of the cheese. The right pH level ensures that our mozzarella is soft, creamy, and bursting with flavour.

🔍 How Do We Check It?
1. Sample Preparation: We take a small sample of our milk or curd.
2. Using pH Strips: We dip a pH strip into the sample to measure the acidity level.
3. Ideal Range: For mozzarella, we aim for a pH between 5.0 and 5.5. This range is crucial for that perfect stretch and melt!
