The second delight in my ‘sweet tooth’ series is this energy powerhouse ‘Dates Halwa’. It is sugar free in the sense that no sugar or sugar alternates have been added to it, however dates themselves contain good amount of natural sugars (36g in this 65g portion to give you an idea). Also 200 calories for a 65g portion is a lot of energy so use it wisely 😊. Dates are also considered a libido booster so I suppose happy hormones all around Lol. Just hit the gym after if you are single 😂. Jokes aside, this is one of the simplest, healthiest and probably the tastiest dessert you would come across. I love nuts so I garnish it with an assortment of ground nuts such as almonds, cashews, pistachios and desiccated coconut etc. which definitely adds to the taste. I was born with a sweet tooth so large that it would fit my whole damn mouth lol. I am not a ritualistic person but the ritual of having a dessert after a meal is a ritual that I still time to time follow and undoubtedly enjoy immensely 😊. Of course, regular sugary delights no longer fit my diet so I had to go sugar free and try to reduce as much of fat from my desserts along with gluten and unhealthy carbs as was possible, without compromising the taste.
This sugar-free egg halwa is the first in my ‘sweet tooth’ series as it has some fond childhood memories attached to it. My first ever memory of any dessert is of egg halwa made for me by my mom when I was just a toddler. I remember as a child insisting on having egg halwa for breakfast, lunch and even for dinner (mostly for my utter disappointment but I insisted nevertheless Lol).
Above nutritional information is based on a portion of 2 large eggs (and the size of my sweet tooth lol) but I think for a typical dessert half of that amount would suffice depending on the size of your sweet tooth 🤣🤣.

I love pasta (well who doesn’t?) but in my case it has to be with cheese and preferably lots of it. You see where it’s going right? Lol… Lots of carbs, lots of fat… doesn’t really go with my weight/fat loss regime. However, I don’t believe in quitting so the obvious solution was to create a pasta recipe that satisfies both my taste buds and my fitness goals. The result is this yummy pasta inspired by Charsi Chicken Karahi. It is gluten free, protein rich and even with 25g of 50% fat free cheddar per serving only has 10g fat. Well you can’t ask for more from pasta, can you? … I know, I can’t 😉

Panini literally means a bread roll in Italian. However, despite of its Italian origins, many cuisines, especially Middle Eastern, have adopted this bread roll and made it a part of their own cuisine. I love panini and used to visit a Lebanese café in Alperton just for their panini. ‘Used to’ being the operative word here, as that panini even though delicious was full of processed meat, fat and unhealthy carbs. So, I think you would understand why I had to create a healthier version. My skinny panini is gluten free, made with lean chicken breast and fresh veggies. At present I have made 4 healthy chicken fillings and working on some vegetarian and sea food ones. Other than the amount of calories, fat, carbs and protein mentioned above, one panini meal gives you 6g of Dietary Fibre which is 25% of your daily value based on 2000 calorie diet making it a perfect lunch.

I think there are more versions and variations of Biryani than the starts in the sky Lol…. Seriously, every part of India, Pakistan, Sri Lanka and Bangladesh and even some middle eastern and western countries seem to have a curried rice dish resembling Biryani. Most popular of course is the omni present (at least here in west London) Chicken Biryani. However, there are also vegetarian and seafood versions. This is my take on Seafood Biryani which I make with either fish or prawns but this particular one KING PRAWN BIRYANI is my personal favourite. It’s filling, amazingly tasty, and for being low in fat and protein rich makes a perfect healthy lunch.

The history of Shami Kabab is shrouded in mystery and there are quite a few stories floating around regarding the origins of Shami Kabab. The one that appeals to me, is of Nawab Asaf-ud-Dulah of Lucknow, who was a big foodie and in his old age had lost all of his teeth and became so obese that he could no longer ride a horse. His love for food however remained and one of his chef, who was originally from Syria created this soft meaty delight so Nawab could still indulge his taste buds.
I myself was a big fan of Shami kababs since childhood but since I started my fitness journey I had to refrain from it because of its fried and fatty nature. That however is no longer the case as I have recreated this recipe which can be either shallow fried in very less oil or even air fried, making this a perfect protein rich weight loss recipe. Shami Kabab is essentially a burger so you can enjoy it in a sandwich or a roll, as much as with Naan or paratha on your cheat meal days.

CHICKEN POTATO CURRY (ALOO GOSHT)
Traditionally, Aloo Gosht is cooked with Mutton but since I have started my fitness journey I try to avoid red meat and mostly stick to white meat. This is another one of my skinny version of a traditional curry and even though it is low in fat made with chicken, it is still full of flavour and goes well with both chapati and rice.

NO MORE DEEP FRYING
Lahore is famous for its street food and one of my favourite street foods of Lahore is ‘Chargha’, which is whole chicken marinated in an awesome assortment of spices, steam-cooked and then deep fried… Oh yes, deep fried… and that’s what stopped me from enjoying this delicious treat since I had begun my fitness journey but not anymore. I have just invested in a commercial grade air frier and just by looking at this image of ‘Air Fried Chargha’ you can tell it has already proven its worth. It is the latest addition to my Skinny Menu and a testament to my moto, ‘Healthy doesn’t have to be boring’ 😊

It’s early march and yet still a bit chilli here in London (Chilli being the operative word here 😊). So, let’s be chilled about it and, let me present you my skinny version of this hot and spicy chicken soup from Northern Pakistan.
