This is something we’ve been working on for a while... 👀

And if you’ve travelled from outside Merseyside to find us at an event, you’ll probably know exactly what it is.

We’ve spent the past few months testing ways to keep our ferments cold and protected on the road. They’re alive, so sometimes they have a mind of their own. That’s part of making proper, all-natural food.

And we’re finally nearly there.

For now, it’ll be our range of jars, Water Kefir will follow in the coming months.

So, to everyone who’s travelled to find us, messaged us or politely waited for us to get things rolling, it’s almost time.

Very soon, you won’t need to live near us to get Wild Pantry delivered to your door.

From next-day delivery to a little guidebook to help you make fermented foods part of everyday life.

We can’t wait to start sending our living ferments across the mainland (no NI or British Isles yet).

What started with a pre-cancerous diagnosis, and the health journey it sent us both on, has somehow turned into something far bigger than we ever imagined.

Today, finding out someone had made a 140-mile round trip just to come and buy our Water Kefir really stopped us in our tracks.

Whether you’re a regular at our markets, one of our stockists, someone who tells their friends about us, or someone willing to travel 70 miles each way to find us, we’re so grateful you’re part of Wild Pantry.

And hopefully those long journeys won’t be needed for much longer.

We’re nearly ready to turn on UK delivery for our fermented jars. We’re feeling good about the cold shipping after plenty of testing, so it won’t be long now.

Water Kefir will be following next, stay tuned.

Pickles aren’t always fermented. And fermented doesn’t always mean living cultures
😅

Before Wild Pantry, we didn’t really know the difference either.

Fermented food felt like this slightly mysterious world of sauerkraut, kimchi and jars bubbling away on kitchen counters.

Then we started making it ourselves, to support our health.

And one of the biggest things we learnt was that sour doesn’t always mean fermented.

A lot of pickles get their sharp flavour from vinegar. Fermented vegetables get there in a very different way.

With sauerkraut, you can start with something as simple as cabbage and salt.

Naturally present bacteria begin feeding on sugars in the vegetables. They produce acids, the pH drops, the flavour changes and slowly that cabbage becomes sauerkraut.

But there’s another part of the story.

Some fermented foods are pasteurised after fermentation. Heat makes them easier to store and can give them a longer shelf life, but it also means the live cultures from fermentation don’t survive.

That’s why our sauerkraut is raw, unpasteurised and kept chilled.

We choose the slightly harder route because we want you to get the food in the form that made us fall in love with fermentation in the first place, thanks to it’s health benefits.

So next time you’re looking at pickles, sauerkraut or fermented vegetables, ask two questions:

Was it actually fermented? (Is there vinegar in the ingredients?)

And was it pasteurised afterwards? (Is it in the fridge or on a shelf?)

Because pickled, fermented and unpasteurised don’t all mean the same thing.

We took a Mojito Water Kefir to The Durrells’ White House.

Sadly, they weren’t in to try it.

Before there was Wild Pantry, there was a jar sitting on our kitchen worktop.

It was our very first ferment. We wanted to create something packed with ingredients we knew our bodies would benefit from, while making something people would actually look forward to eating.

That jar became PowerKraut.

At the time, we weren’t building a business. We were simply asking ourselves what a sauerkraut could be if we made it the way we wanted to eat it.

We wanted bold flavour. We wanted colour. We wanted beetroot, red onion, garlic, turmeric and black pepper, all brought together through natural fermentation and full of live cultures.

There were plenty of batches, plenty of tasting and plenty of small tweaks before we landed on the recipe that’s now become PowerKraut. Truthfully though, that very first batch wasn’t far off.

Today, that same recipe has been awarded a Great Taste Award.

That means a lot to us and is actually a big one of our goals ticked off.

Great Taste judges every product blind. They don’t see the branding or the packaging. They simply taste what’s in the jar.

For a small business like ours, that’s exactly how we’d want it.

Every jar of PowerKraut is still made in small batches here in Liverpool. It’s still raw, unpasteurised and alive, just like those first jars we made before Wild Pantry even had a name.

Thank you to everyone who’s bought a jar, shared it with friends, stopped by one of our market stalls or supported us in any way. You’re part of this story too.

There’s a reason our Elderflower Champagne tastes the way it does 💛

We don’t make water kefir to be sharp, sour or difficult to enjoy.

We make it to be part of your everyday.

So we start with a water kefir made with Wild Pantry's own culture that is undiluted, unfiltered, unpasteurised and full of live cultures.

Then we build flavour with real ingredients.

For this bottle, that means organic elderflowers paired with organic white wine grapes from the Macabeu and Parellada varieties. The result is a light, floral sparkle that feels familiar from the first sip.

It’s still proper water kefir, still alive.

Just made with flavour first, so more people can enjoy the benefits of fermented drinks without feeling like they have to compromise on taste. Whether as an alcohol alternative or simply just cause it's so refreshing.

It even picked up a 'Master' award along the way.

We think that’s how fermented drinks should be, and it's quite simple; honest ingredients, proper living cultures and outstanding flavour.

A little change to our weekend plans 💛

This week’s heatwave has been a challenge for our live ferments, which means we’re short on stock. That’s one of the realities of making real, live fermented food and drink
 everything is quality checked and sometimes things aren’t right.

You’ll find us tomorrow at Little Sutton Village Market at St Paul’s, Hooton from 10am.

We’ll have all of our krauts and salsa, plus a very limited amount of water kefir. If you’ve been planning to stock up, we’d recommend coming early.

Sadly, we won’t be at Haigh Woodland Park on Sunday as planned with .

Thanks for bearing with us. I can’t believe I’ll say this, but we’re looking forward to it being cooler for our ferments 😅
