We found that a lot of fishmongers seem to have an arrogance about them when you enter their shops and did not feel shoppable. We wanted to reverse that from day one by providing training on customer service, fish prep skills, cooking techniques, catch methods and Provenance. A little fact about LOF is we don’t actually hire any experienced fishmongers for our shops because we prefer to train them ourselves. Hiring somebody that has the right personality/attitude for us will always outweigh how you fillet a fish.

Such a great experience being on the

From cleaning gut bins, filleting fish through the night, street food, Selfridges and much more it’s been a long ride and I’m exhausted. Was great to tell the story on the podcast and I hope it can inspire people to start their own business.
