If you’re looking for a hug in a bowl, TOM KHA G*I is exactly that. It is a classic Thai coconut soup known for its sophisticated balance of creamy, sour, salty, and spicy flavours.
While "Tom Yum" is the fiery, clear-broth cousin, Tom Kha is its mellow, velvety relative. 🍲
Method (for 2):
1. In a large saucepan over medium heat, combine the chicken stock and coconut milk. Add the sliced galangal, bruised lemongrass, and tip lime leaves. Bring the liquid to a gentle simmer for 6–8 minutes.
2. Keep the heat at a steady, low simmer and add the chicken pieces. Poach gently for 8–10 minutes until the chicken is tender and fully cooked through.
3. Stir in the mushrooms and chilies. Continue to simmer for another 3–5 minutes until the mushrooms are softened and the chilies have released a hint of warmth into the broth.
4. Stir in the sugar along with 3 tbsp of fish sauce and 3 tbsp of lime juice. Give it a good stir, then take a sip.
• Need more salt? Add a splash more fish sauce.
• Too rich? Add a squeeze more lime.
• Too sharp? Add a pinch more sugar.
