This green smoothie bowl is the perfect way to start your day feeling light and bright. Blended with coconut milk, banana, spinach and avocado, it’s packed with goodness and finished with your favourite fruit and coconut toppings.

120ml coconut milk
1 frozen banana
1 handful spinach (or kale)
½ avocado
½ tsp coconut sugar (optional, for light sweetness)
Splash of water or extra coconut milk (to blend if needed)

Banana bread is always a good idea. Vegan coconut sugar banana bread is an even better one!

3 large black bananas
75ml coconut oil
100g brown sugar
225g plain flour
3 heaped tsp baking powder
3 tsp cinnamon
Optional add ins: handful of chopped nuts or vegan choc chips

Mash the bananas and add the coconut oil and coconut sugar. Fold in the flour, baking powder and cinnamon.
Bake at 200C for around 40 minutes or until a skewer comes out clean.

Stop making this mistake with coconut flour!

If your coconut flour baking ever turns out dry, crumbly or dense… you’re probably making this one simple mistake... Not using enough moisture.

Coconut flour is not like regular flour. 🥥 It’s incredibly absorbent which means it doesn’t just “mix in”, it soaks up liquid. That’s why it absolutely loves eggs. liquids and moisture-rich ingredients.

The key to success is not a direct 1:1 swap for flour. It's increasing the liquid content. Let us know what you love making with coconut flour in the comments!

Coconut flour works a little differently from regular flour, so it helps to adjust your approach when using it.

It’s lighter, more absorbent and naturally a little sweet, which means you’ll usually need less of it and more liquid or eggs in your recipe. Start by substituting only a small portion of your regular flour and see how the texture changes.

If you’re experimenting in your next baking session, take it slow and tweak as you go.

Bake it till you make it… banana bread edition.

Ingredients:
3 ripe bananas (mashed)
100g coconut sugar
2 eggs
80ml coconut oil (melted)
1 tsp vanilla
150g flour
1 tsp baking soda + pinch of salt
Optional: chocolate chips or nuts

Instructions:
Preheat oven to 180°C and line a loaf tin. Mash bananas in a bowl, then mix in coconut sugar, eggs, coconut oil and vanilla. Add flour, baking soda and salt mix until just combined. Fold in chocolate chips or nuts if using. Pour into the tin and bake for 45–50 minutes until golden and set.
