Sweet Pumpkin pie with Olive oil! It's different, yummy and has no butter or eggs!! With love from Greece 💙🇬🇷

Ingredients
• short crust pastry or  12     phyllopastry sheets 
1 kg of graded pumpkin
 • 200gr. sugar (or 100gr. if you want it less sweet)
• 200gr. coarsely ground walnuts
• 50gr breadcrumbs or ground french toast
• 4 table spoons of sultanas or raisins
• 1 tablespoon of ground cinnamon 
• ½ teaspoon  ground clove
• 3/4 a cup of olive oil (try our extra virgin, cold pressed olive oil)
• icing sugar or honey and ground cinnamon to sprinkle on top

Grate the pumpkin  on the cheese grater or in the grater of the food processor. Leave it in a colander until its liquids start to drain. Drain it well with your hands by squeezing it and place it in a large bowl.

Mix the pumpkin with the breadcrumbs, sugar, walnuts, cinnamon and cloves.

Preheat the oven to 180 degrees or 160 degrees for fan oven. 

In a round or rectangular baking pan ( 32cm long/diameter)  place half the phyllopastry sheets   oiling them one by one with olive oil by using a brush. Make sure the pastry covers and spreads over the sides of the pan so that you can later told it inwards and "wrap" the filling. Use the phyllopastry both length wise and width wise to achieve that.   Spread the filling and turn the phyllopastry sheets inwards  to cover it.

Use the remaining sheets to create the top of the pie and cover the filling. (Do  not forget to oil them one by one!!). Sprinkle a bit of water over the pie. Bake for about 1 hour until the pastry becomes golden.

Optional: In several parts of Greece they make pumpkin pie witn syrup. 
Syrup: • 1½ cup of sugar,
• 2 cups of water,
•1 cinnamon stick and
1 tsp. lemon juice 
Boil the ingredients for about 5-7 minutes on low heat and leave to cool. When the pumpkin pie comes out of the oven, pour the syrup over it and let it absorb.

Are you having a lazy Sunday morning? Here is an idea! Try baking with extra virgin olive oil! Dry fruit/dry fig cake with extra virgin olive oil💙🇬🇷

Cake with dried figs and olive oil

Ingredients:

2 cups chopped dried figs or a mix of  figs, apricots, plums, raisins 
(use the same cup throughout to measure)

1/4 a cup of brandy or any liqueur

3/4 a cup of water/Orange juice -I prefer the latter.

1/2 a cup of olive oil

1 tablespoon citrus zest

2 eggs

1 cup sugar (white or brown (preferred)) or less if you want 3/4 cup- I prefer this

2.5 cups of self-raising flour

Put the fruit in a bowl and pour the brandy/liqueur and
water over it. Leave them for at least an hour to swell and soften.
Beat the olive oil with the sugar until creamy and add the eggs one by one. Add half the flour and the zest. Now add the dry fruit with the orange juice or soaking water from the dry fruit and mix well. Add the rest of the flour gradually.

Pour the mixture into an oiled and floured round or rectangular cake baking pan and bake it in a preheated oven at 180C( if fan oven 160°C) for 50-60 minutes. Test it at 50' by putting through the cake a knife and check if it comes out clean with no dough stuck on it.
When ready, let it stand in the pan for 10 minutes and
turn it over. Sprinkle with icing sugar if you want

Comments:

1) When baking cakes do not open the oven for the first 40-45 minutes. If necessary,then cover our cake with baking paper. Even the test knife is
dipped after 50 minutes in the cake otherwise it deflates.

2) Instead of zest we can put cinnamon but I think that with cinnamon it is more wintery. Also instead of water we can put orange juice or milk.
