What are the two most expensive spices in the world?

The saffron crocus blooms for just a brief window, and each flower produces only three delicate stigmas, all harvested by hand.
The vanilla orchid is just as demanding. Every flower must be pollinated by hand, and if you miss the flowering window, you get nothing.

The main flavour compound in vanilla is called **vanillin**, and we've learnt how to produce it in laboratories. That's why vanilla-flavoured ice cream, protein shakes, and desserts can be made so cheaply.
But real vanilla contains hundreds of aromatic compounds beyond vanillin, creating a depth of flavour that simply can't be replicated by a single molecule.
