Hands down the most delicious GREEN smoothie – it’s tangy, fresh, doesn’t taste green at all – promise even your kids love it (we name it The Hulk!)

½ cup frozen pineapple
½ cup frozen mango
1 cup frozen banana
¼ cup frozen broccoli
¼ cup frozen spinach
200ml apple juice

Blend until you’ve got the right consistency!

True story… 🫘 I was making a kir royale for some friends at the weekend (that’s blackcurrant liqueur + prosecco) and was rooting around the freezer for frozen blackberries for a garnish. Grabbed a handful and popped… black beans in the glass instead! Woops. 🙊

Which… made me think of other drinks I could put black beans into! (and actually, the reverse on this works well too – putting a couple of squares of dark chocolate in your chilli con carne adds a delicious layer of flavour)

Easy morning smoothie recipe:
1 cup frozen cherries
1 cup frozen banana (or 1 large banana, not overripe)
1 tbsp cocoa powder (or cacao, although that’s a little intense for younger kids)
¼ cup tinned black beans
1 dash maple syrup
Pinch of flaky sea salt
200ml almond milk, ideally unsweetened

Blend until you’ve got the right consistency!

BUTTERNUT SQUASH. Breakfast smoothies are a non-negotiable in our house – quick, easy, and always gone in seconds. Which makes them the perfect place to pop in a little extra goodness… protein, fibre, you name it.
This was a riff on a pumpkin spice latte – genuinely delicious, I had to make one for myself when I got back from the school run!

Easy morning smoothie recipe:
¾ fresh apple, skin on, chopped
1 cup frozen banana (or 1 large banana, not overripe)
½ cup frozen butternut squash
1 tsp cinnamon
¼ tsp ginger
¼ tsp cloves
1 tbsp almond butter
1 dash maple syrup
200ml coconut drink (not from a tin, the stuff in a carton)

Blend until you’ve got the right consistency!

Did you spot today’s ingredient?! 🫘

Smoothies are a morning staple for my boys – quick to make, easy to drink, and (thankfully) always a hit. Which means I can get a little creative and add in some extra goodness – protein, fibre, whatever they need.

Today: BUTTER BEANS – odd, but trust me, they add a kind of creaminess, and are a great source of fibre too.

1 tbsp peanut butter
¼ cup tinned butter beans
200ml apple juice
Blend until you’ve got the right consistency!

This was [drum roll] CAULIFLOWER RICE! Not even kidding – no change in taste, but a good fibre boost.

I make my boys a smoothie most mornings – quick, easy, and as there’s no pushback, I like to add a little extra something to give them a boost – extra protein, or fibre, or both.

Easy morning smoothie recipe:
¼ cup frozen strawberries
¼ cup frozen raspberries
¼ cup frozen blackberries
¼ cup frozen cauliflower rice
200ml apple juice

Blend until you’ve got the right consistency!

Not smashing it out of the park but I thought they were delicious anyway... I think this is a really nice way to get kids used to eating leeks - make them crispy!

This is such an easy recipe - if you can call it that - you just chop the leeks, pop out the centre, fill the hole with cream cheese/Philadelphia/Boursin or other soft cheese.

Then make a batter with 2tbsp self raising gluten free flour (I like Doves Farm/Freee), with a dash of very cold, sparkling water. Add enough until you have a gloopy consistency - like double cream (or heavy cream for the US), and coat your leeks in it. You want them to be fully coated, with no leek showing as that will burn when in the hot oil.

Then about 1-2 inches of neutral frying oil into a pan, heat until shimmering point. Drop in a little blob of batter to test the temperature, you want it to crisp up and turn golden in about 2mins, not burn instantly, but not take too long to cook as they’ll get soggy and greasy otherwise.

Fry for 2mins in batches of 3-4, then out of the pan, onto kitchen paper and leave them to cool for 5 minutes - very important! A little sprinkle of sea salt and see what your kids think... Would love to know, hit me up in the comments!
