The family (all 17 of us!) have just returned from an incredible holiday in Jamaica and it’s safe to say the jerk chicken was consumed in seriously impressive quantities. Fresh scotch bonnet sauce on the table every single day. Bold, vibrant, unapologetic flavour. Exactly the kind of food that reminds you why great ingredients matter.

☀️ Summer is coming — is your BBQ ready for it?
Forget the ketchup. Here’s what we’d be cooking:

🥭 Mango Habanero — spatchcock chicken, marinated overnight and grilled whole. Sweet, fiery and genuinely impressive.

🍍 Pineapple of Fire — thick pork belly slices, slow cooked then thrown on the grill to caramelise. Messy, sticky, absolutely worth it.

🌿 Lime & Coriander — whole sea bass stuffed with herbs, grilled over coals and finished with a heavy drizzle. Proper showstopper.

🍯 Honey, Lemon & Ginger — rack of ribs, glazed and grilled until they’re falling off the bone. The one people are still talking about the next day.

🌶️ Piri Piri — butterflied leg of lamb, marinated for 24 hours and cooked low and slow over charcoal. Worth every second of the wait.

🌴 Jerk Sauce — pulled chicken thighs, slow cooked on the grill and loaded into flatbreads with mango salsa. This is the one.

🌶️ Behind the Batch — Mango Habanero Hot Sauce 🥭

After an 8am till 5pm this is what a side hustle looks like.

No days off. No shortcuts. Just a passion that refuses to stay small.

Every bottle starts with the basics. Hair net on, beard net on, apron on. Food hygiene is no joke when you’re making sauce for other people to enjoy.

Before anything goes in the pot, we calibrate our pH meter. Getting the acidity right isn’t just about taste. It’s about making sure every bottle is safe and shelf stable.

Then comes the good part. Habanero peppers, mango, onion and garlic all go into the pot and slow cook down into something beautiful. Salt, sugar and vinegar go in to balance the heat and bring it all together. One blast with the stick blender and it’s silky smooth.
