Gourmet mushrooms for the Christmas feast?

We'll be swapping the pork for garlic Oyster mushrooms in our festive stuffing this year: chop your Oysters finely, dry sauté, and combine with garlic, thyme, sage, olive oil, onion, breadcrumbs, and a little stock 🎄😋🍄

Our network is expanding!

As of this week, you can now find our gourmet mushrooms not only at the brilliant Hatherleigh Market, but also on the shelves of two wonderful local farm shops:

Oyster mushrooms are the ultimate flavour sponge. 🍄 Feeling experimental I combined some Oysters with crushed garlic, za'atar, smoked paprika, and cumin, then finished with spicy chipotle flakes. Finally, mixing through spaghetti resulted in a seriously satisfying meal 😋

Ingredients:

🍄A big bunch of Oyster mushrooms, torn
🧄Garlic, sliced
🥄Za'atar, Smoked Paprika, Cumin
🌶️Chipotle Chili Flakes
🧴Olive Oil
🍝Spaghetti
🍋Lemon wedge (optional)

Rough method:

1. Crisp torn oyster mushrooms in olive oil over medium-high heat.
2. Add a big pinch of each spice and the garlic - heavy on the Zaatar and garlic. Fry for another minute until the kitchen smells delicious.
3. Cook spaghetti, then toss it into the pan with a splash of pasta water to create a simple sauce.
4. Finish with a final sprinkle of chipotle flakes and a squeeze of lemon juice if you like.

There’s something grounding about knowing exactly where your food begins.

At Willow Chip Farm, the mushrooms rise from wheat straw sourced less than a mile away, carrying almost no food miles on their journey to your plate. The farm is run entirely off-grid, with renewable energy providing much of the farm's energy requirements.

Though the willow coppice we’ve planted won’t be ready for a few years, its growth is already drawing down carbon and when cut, each shoot will spring again, continuing the cycle.

We work with permaculture principles: observing, using what’s near at hand, letting one thing serve many. The spent substrate from each crop is returned to the soil, feeding earthworms, hedges, and fields.

If you’d like some of these mushrooms for your own table, you can find us at Hatherleigh market, near Okehampton, Devon ☺️
