Salade Niçoise (Nice salad). It is high in protein, crisp, and quick to prepare.

Fish: High-quality tuna from La Quiberonnaise and sardines from la belle-iloise.

Greens: Leafy salad (romaine or iceberg lettuce). Vegetables: Green beans (blanched), tomatoes, bell peppers, red onions.

Potatoes: Firm potatoes, cooked and sliced.

Extras: Hard-boiled eggs, black olives from Nice.

Dressing: Classic vinaigrette made with good olive oil from Provence, lemon juice or white wine vinegar, mustard, garlic, salt, and pepper.
