🌾 One More Little Secret of My Rye Bread
I’ve known about the beneficial properties of fenugreek for a long time. I used to add it to homemade cheese — and it was probably one of the most delicious cheeses I’ve ever made.
And now fenugreek has found its way into my rye bread too. 😊
Along with coriander and caraway, I added just a little crushed fenugreek seed — less than a teaspoon per loaf. And what an aroma! Warm, spicy, slightly nutty… It made the flavour of the bread even richer and more interesting. 🍞🤎
And the most fascinating thing is that fenugreek is much more than just a spice. It is an ancient plant that has been used in traditional medicine for centuries. In the East, it is also known as hilba, and traditionally it even earned a reputation as a “remedy for forty ailments.” Of course, this is an old folk expression rather than a medical claim, but the reputation of these tiny seeds is certainly impressive.
Fenugreek is rich in fibre and naturally occurring bioactive compounds, and today it continues to be studied for its potential effects on metabolism, blood sugar and cholesterol levels.
I love the thought that this tiny seed, valued by people for centuries, has now become part of my bread too. 🌿

Eight loaves of homemade Ukrainian rye bread are ready for our Ukrainian Day at Clogherhead RNLI Lifeboat Station.
Made by hand, at home, with care — not for sale, but to share. ❤️
Tomorrow we want to bring a little piece of Ukraine to the Irish table: our food, our traditions and, above all, our gratitude.
It is our Ukrainian community’s way of saying thank you to Ireland and to the incredible RNLI volunteers who save lives at sea. 🇺🇦🤝🇮🇪🌊
