*Chocolate Peanut Butter Layer Cake*
Ingredients:
For the Chocolate Cake:
- 1 ¾ cups all-purpose flour
- 1 ¾ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
For the Peanut Butter Frosting:
- 1 cup unsalted butter, softened
- 1 ½ cups creamy peanut butter
- 4 cups powdered sugar
- 1/4 cup heavy cream (adjust for desired consistency)
For the Chocolate Ganache:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions:
1. Prepare the Chocolate Cake: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, vegetable oil, and vanilla extract, and mix until smooth. Gradually stir in boiling water until combined.
2. Bake the Cake: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
3. Make the Peanut Butter Frosting: In a mixing bowl, beat the softened butter and peanut butter together until creamy. Gradually add powdered sugar and mix until well combined. Add heavy cream to achieve a smooth, spreadable consistency.
4. Make the Chocolate Ganache: In a small saucepan, heat the heavy cream until just simmering. Pour it over the chocolate chips in a heatproof bowl and let sit for 5 minutes. Stir until smooth.
5. Assemble the Cake: Place one chocolate cake layer on a serving plate. Spread a layer of peanut butter frosting on top. Add the second cake layer and frost the top and sides of the cake with the remaining peanut butter frosting.
6. Drizzle with Ganache: Pour the chocolate ganache over the top of the frosted cake, allowing it to drip down the sides.
7. Serve: Slice and enjoy this decadent chocolate peanut butter layer cake!
Notes:
- For added texture, sprinkle crushed peanuts on top of the ganache before it sets.
