Homemade Orange Cupcakes

Ingredients:
1/2 cup (227grams/4 Oz) butter, softened
3/4 cup (150grams/ 5.3Oz) sugar
Zest of 2 oranges
2 eggs
1/2 cup (120ml) sour cream (non-fat, light or regular)
1/4 cup fresh orange juice
1-1/2 cup (204grams/7.2Oz) flour
1 t. baking powder
1/2 t. salt
1/2 t. baking soda

Chocolate loaf
Ingredients
1 cup cake flour
1 cup white sugar
1/2 cup milk (125ml)
1/2 cup melted butter
2 eggs
5 Tbsp cocoa powder
1 tsp baking powder
1 tsp vanilla essence
2 tsp coffee powder
1/4 tsp salt
Note : You can use all purpose flour instead of cake flour .

Instructions
1. In a large bowl add the melted butter and sugar . Mix well .

2. Add vanilla and mix in one egg at a time . Then add milk , gently mix .

3. Sift in flour, cocoa powder, coffee powder, salt , baking powder.
Mix gently until the wet and dry ingredients are well combined.

4. Pour the batter ( mixture) in a prepared loaf tin.

5. Bake in a preheated oven at 180 Degrees for 30 minutes.

OPTIONAL: Chocolate glaze
1/2 cup chopped chocolate
2 Tbsp milk
Add the chocolate and milk in a small bowl . Let it melt over boiling water or in a microwave. Mix until you get a smooth and thick consistency.

STRAWBERRY BOMBS RECIPE

🌟 INGREDIENTS

◾️300 g (2 cups) flour
◾️1 egg
◾️45 g (1/4 cup) sugar
◾️pinch of salt
◾️7g dry yeast
◾️140 mL (3/5 cup) hot milk
◾️40 g (1/4 cup) softened butter

🌟 For the decoration:
◾️Whipped cream
◾️Strawberries (chopped)
◾️Powdered sugar

🌟 METHOD

◾️In a medium bowl, combine sugar, yeast and milk and stir to dissolve.

◾️Whisk in egg. Add the flour and salt, and begin mixing the dough with a spatula.

◾️Continue to knead it with your hands until you have an elastic dough.

◾️Add the softened butter and continue kneading until the butter is well incorporated into the dough.

◾️Form the dough into a ball, cover with a cloth or plastic wrap and let rise for one hour.

◾️Divide the dough into 8 parts and roll each into a ball.

◾️Cover and let rest for 30 minutes.

◾️Flatten each ball a little and roll it into a ball again.

◾️Cover and let rest for another 30 minutes.

◾️Fry the balls in hot oil over low heat for 2-3 minutes on each side.

◾️Let cool slightly and cut in half lengthwise, like a burger bun.

◾️Top one half with whipped cream and chopped strawberries, close with the other half, sprinkle with powdered sugar and serve.

One Bowl, No Eggs Chocolate Cake
Ingredients :
Dry Ingredients :

1.5 cups All-purpose flour
1 cup Sugar
1/4 cup Cocoa powder
1 tsp Baking soda
1/2 tsp Salt

Wet Ingredients :

1 cup Water
6 tbsp Oil
1 tsp Lemon juice
1 tsp Vanilla extract

Easy Instructions :

Grease your baking tin and line the base with parchment paper. In the same pan sift your dry ingredients. Add sugar and mix everything well.

Next, add in the wet ingredients. Mix everything until you see no hint of flour. This would take about 30 seconds. Do not overmix.
Bake in the preheated oven at 180°C for 30-32 mins.

For the Chocolate Whipped cream :

Add all the ingredients mentioned for whipped cream in a bowl and whip to soft peaks.

To Assemble :

Divide the cake into two using a serrated knife in a see-saw motion. Apply sugar syrup onto it. Place half of the whipped cream on top of the base layer. Spread it out. Place a layer of blueberries in the centre.

Layer the other half of the cake on top. Spread the remaining cream on top. Top it off with the remaining cream and garnish with strawberries and blueberries.

RED VELVET CAKE
For the cake
1. All purpose flour – 2 ½ cup
2. Cocoa powder – 6 tbsp
3. Baking soda – 1 tsp
4. Salt – ½ tsp
5. Butter milk – 1 cup
6. Vinegar – 1 ½ tbsp
7. Unsalted butter – 200 gram
8. Sugar – 2 cup
9. Vanilla essence – 1 tsp
10. Egg – 4
11. Fresh cream – ¼ cup
12. Red food colour – 1 tbsp – 1 ½ tbsp

1. Preheat the oven to 180. Grease two 8” round cake tin with butter and line with parchment and keep it ready.

2. In a deep bowl, sift together all purpose flour, cocoa powder, baking soda and salt. In another bowl, combine together buttermilk and vinegar and keep it ready.

3. In another bowl, cream together butter and sugar till creamy. To this add vanilla essence and eggs (one at a time) and beat till combined, scraping the sides of the bowl occasionally. Add the cream to this mixture and combine well.

4. Add the flour mixture and buttermilk to this mixture little by little and stir till combined. Now add the red food colour and combine evenly. Pour this batter in the prepared cake tin and bake for about 35 – 40 minutes or till done (check by inserting a tooth pick at the center of the cake, if it comes out clean, the cake is done.

5. Remove it from the oven and cool it at room temperature for about 20 minutes. Remove the cakes from the cake tin carefully and cool it over a wire rack. Cut the cakes on top to get neat layers (reserve it to garnish the cake).

For the frosting

1. Cream cheese – 230 gram
2. Unsalted butter – 150 gram (at room temperature
3. Icing sugar/ Powdered sugar – 3 cup
4. Vanilla essence – 1 tsp
In a deep bowl, beat together all the above ingredients till soft and creamy, for about 5 – 6 minutes.

For layering

Place a layer of red velvet cake and spread ¼th of the prepared cream cheese frosting. Place the other red velvet cake on top and cover the top and sides with the remaining cream cheese frosting and do the decoration with the help of icing bag. Garnish with the cake crumbs. Serve cooled.

Note : Prepare buttermilk at home if readymade one not available. For 1 cup of milk, add 1 tsp vinegar, combine and leave it for about 10 minutes and use in the recipe.
