Recipe of the Week:
Moi Moi (Steamed Bean Pudding)
Ingredients:
- 1 cup dried black-eyed peas or beans, soaked overnight and drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons vegetable oil
- 2 cups water
- 2 tablespoons tomato paste (optional)
Instructions:
1. Blend soaked beans, onion, garlic, salt, black pepper, and cayenne pepper (if using) into a smooth paste.
2. Heat oil in a pan over medium heat.
3. Add the bean paste and stir-fry for 2-3 minutes.
4. Add water and tomato paste (if using), and stir well.
5. Pour mixture into a greased steaming bowl or foil cups.
6. Steam for 20-25 minutes or until pudding is set.
7. Serve hot or cold.
Tips and Variations:
- Use different types of beans or peas.
- Add chopped bell peppers or tomatoes to the bean paste.
- Serve with a side of rice .
