Baking and confectionery represent two closely related, yet distinct, branches of culinary arts focused on producing flour-based items and sugar-rich sweets, respectively. While baking involves using dry heat in an oven to create items like bread, cakes, and pastries, confectionery focuses on the art of making sugary treats, including chocolates, candies, and specialized sugar-based products. These fields often overlap in retail settings, commonly referred to together as a bakery-confectionery, which serves both everyday staples and specialized, indulgent items.

Key Aspects:
Baking (Flour-based): Primarily involves creating foods with flour, water, and yeast or chemical leaveners. Key products include artisanal breads, cakes, cookies, muffins, pastries, and pies.

Confectionery (Sugar-based): Divided into two main categories:

Sugar Confectionery: Candies, lollipops, jelly candies (gummies, Turkish delight), toffee, caramel, and fudge.

Chocolate Confections: Products made primarily from cocoa derivatives.

Bakery Products vs. Confectionery: Bakeries often produce both sweet and savory items (bread, sandwiches), while confections are almost exclusively sweet.

Fundamental Ingredients: The core ingredients for both include flour, sugar, yeast, eggs, milk, butter, and various leavening agents.
Industry Trends: The industry is seeing a shift toward artisan products, with increasing demand for high-quality ingredients, specialized techniques, and aesthetic, custom-designed items like wedding or specialty cakes.
Professional Roles: Professionals in this field include bakers (focusing on bread/pastry) and confectioners (also known as confiseurs or sugar artists).

Key Principles:

Accuracy:
Baking requires precise measurements of ingredients to ensure the correct chemical reactions.
Temperature Control:
In confectionery, controlling the temperature of sugar boiling.
Texture and Quality:
Defined by its taste, texture, and appearance.
