Ingredients
• 2 medium ripe plantains (about 400g)
• 6 large eggs
• 1 medium onion (100g), chopped
• 1 medium red bell pepper (100g), diced
• 1 small green bell pepper (70g), diced
• 2 medium tomatoes (150g), chopped
• 2 tablespoons vegetable oil (30ml)
• 1 teaspoon curry powder (2g)
• ½ teaspoon thyme (1g)
• ½ teaspoon ground black pepper (1g)
• 1 seasoning cube (4g), optional
• Salt to taste
• 2 tablespoons chopped spring onions or parsley (optional)
Instructions
Prepare the plantains
Peel the ripe plantains and cut them into round slices.
Heat a little vegetable oil in a frying pan and fry the plantain slices until golden brown on both sides. Remove and set aside. You can also bake or air-fry them for a lighter version.
Prepare the vegetables
Add a little oil to a non-stick frying pan. Add the chopped onions and sauté until fragrant.
Add the diced red bell pepper, green bell pepper, and tomatoes. Stir-fry for 2–3 minutes until slightly softened.
Season with curry powder, thyme, black pepper, seasoning cube, and salt. Stir well.
Prepare the egg mixture
Break the eggs into a large bowl and whisk until well combined.
Add the sautéed vegetables and chopped spring onions or parsley. Mix thoroughly.
Assemble the frittata
Arrange the fried plantain slices in a greased non-stick frying pan, spreading them evenly.
Pour the egg and vegetable mixture over the plantains, making sure the ingredients are evenly distributed.
Cover the pan and cook over very low heat for about 10–15 minutes, or until the eggs are almost completely set.
Cook until ready
Check that the bottom is golden brown and the centre is fully cooked. If the top is still runny, cover and continue cooking over low heat.
