Vigan Longganisa
The Vigan longganisa is a small and plump native sausage, good for about two or three bites. Although it is eaten anytime, even as a bread filling, it is traditionally favored as breakfast fare together with fried eggs and steamed or fried rice. ks in its own fat after the water evaporates and is then cooked further until it slightly caramelizes. A tip to avoid crumbling is to place it in the freezer for a while before frying it. Vigan longganisa is said to be an influence of the Mexican salami. The tradition of making this native has existed since the period of the Spanish galleon trade. It is distinct from other Philippine sausages because of its use of the local sugar cane vinegar and Vigan-grown garlic, which are major products of the city as well. Bagnet
Bagnet is a deep fried pork dish from the Ilocos Norte region of the Philippines. It is sometimes called Ilocano Chicharon. Unlike chicharon though, bagnet is made with one whole big hunk of pork belly. The piece is boiled in its entirety for about an hour with certain herbs and spices, then dried in a hot oven, then deep-fried in low heat for another hour. After this you can either cut it up into smaller chunks, or leave it whole, then deep-fry again, this time at high heat, until golden brown and crisp. After it’s first long deep-fry,You can then keep it in the fridge for a couple of weeks, or in the freezer for a longer period. Anytime you need a fix, you simply hack off part of it and do the last, quick and hot deep-fry until it becomes a golden brown and super crispy ,fresh and sour crunch for a salad with bagoong rice . Best dip the bagnet in spicy vinegar (preferably Ilocos vinegar) with plenty of chili ( preferably "siling labuyo" variant) , garlic and onions. Product offers:
