Ingredients (Serves 4)
- 1 lb mahi-mahi fillets (skin removed)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- ½ tsp garlic powder
- Salt & pepper to taste
- 8 small corn tortillas
- 2 cups shredded cabbage (green or purple)
- ½ cup sour cream (or Greek yogurt)
- 2 tbsp mayonnaise
- Juice of 1 lime
- 1 jalapeño, finely chopped (optional)

- Fresh cilantro, chopped
Instructions
1. Season the fish: Pat mahi-mahi dry. Rub with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper.
2. Cook the fish: Heat a skillet or grill pan over medium-high. Cook fillets 3–4 minutes per side until opaque and flaky. Remove and let rest, then break into chunks.
3. Make the crema: Mix sour cream, mayo, lime juice, and jalapeño in a small bowl. Adjust salt to taste.
4. Warm tortillas: Heat tortillas in a dry skillet or directly over a flame until soft and slightly charred.
5. Assemble tacos: Layer cabbage, mahi-mahi chunks, drizzle with lime crema, and top with cilantro and salsa.

Instructions:
1. Prepare rice: Cook rice, season with rice vinegar, sugar, and salt. Let cool slightly.
2. Cook tuna:
If using fresh fillets: Pan-sear until cooked through, then flake into small pieces.
3. Lay the nori: Place a sheet of seaweed on a bamboo mat. Spread rice evenly, leaving 1 inch at the top edge.
4. Add fillings: Place tuna mixture, cucumber, carrot, and avocado in the center.
5. Roll tightly: Use the mat to roll from the bottom up, sealing the edge with a little water.
6. Slice rolls: Cut into bite-sized pieces with a sharp knife.
7. Garnish & serve: Sprinkle sesame seeds on top. Serve with soy sauce, pickled ginger, and wasabi.

Ingredients (for 2 servings)
- 200 g spaghetti (or any pasta you like)
- 250 g prawns (peeled and deveined)
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 4 cloves garlic (finely chopped)
- ½ tsp chili flakes (optional, for heat)
- Juice of ½ lemon
- ¼ cup grated parmesan cheese
- Fresh parsley (chopped, for garnish)
- Salt and black pepper (to taste)

Method
1. Cook the pasta
- Boil spaghetti in salted water until al dente. Reserve ½ cup of pasta water, then drain.

2. Prepare the prawns
- Pat dry and season with salt and pepper.
- Heat olive oil in a pan, add prawns, and cook for 2–3 minutes until pink. Remove and set aside.

3. Make the garlic butter sauce
- In the same pan, melt butter.
- Add garlic and chili flakes, sauté until fragrant (about 1 minute).
- Stir in lemon juice and a splash of pasta water to create a silky sauce.

4. Combine everything
- Toss the pasta into the sauce.
- Add prawns back in, sprinkle parmesan, and mix well.
- Adjust seasoning with salt and pepper.

5. Serve
- Garnish with fresh parsley and extra parmesan.
- Serve hot with garlic bread or a fresh salad.

For the Sauce
- ½ cup mayonnaise (Hellmann’s or similar)
- ⅓ cup sweet chili sauce
- 2 tbsp hot sauce (adjust to taste)

For the Prawns
- 300 g prawns (peeled & deveined)
- 1 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp paprika
- 1 egg

For the Flour Mix
- 1 cup all-purpose flour
- ½ cup corn flour
- 1 tsp salt
- ½ tsp garlic powder

1. Prepare the Sauce
Mix mayonnaise, sweet chili sauce, and hot sauce in a bowl. Set aside.

2. Marinate the Prawns
Combine prawns with soy sauce, garlic powder, paprika, and egg. Mix well.

3. Coat the Prawns
In another bowl, mix flour, corn flour, salt, and garlic powder. Dredge the marinated prawns in this flour mix until well coated.

4. Fry Until Crispy
Heat oil in a deep pan. Fry prawns in batches until golden and crispy (about 3–4 minutes). Drain on paper towels.

5. Toss in Sauce
Add fried prawns to the prepared sauce and toss until evenly coated.

6. Serve & Garnish
Place on a serving dish, garnish with chopped spring onions, and enjoy immediately!

Lemon Garlic Fish
Ingredients:
- Tilapia
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- Fresh parsley, chopped
- Salt & black pepper

Steps:
1. Pat fish fillets dry and season with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat.
3. Add garlic, sauté for 30 seconds, then place fish fillets in the pan.
4. Cook 3–4 minutes per side until golden and flaky.
5. Squeeze fresh lemon juice over the fish and sprinkle with parsley.
