Just finished some meal prep before a fast n’ furious rainstorm blew through and cut the power! I even got all clean up done! Perfect timing ⏱️ ✔️
I love that my weekly farm share from Ripley Farm arrives on Wednesday with Thursday being my day off, so I get time to prep. Due to being sick last week- I actually worked off last week’s box today. Want to know one of the best things about buying/growing farm fresh veggies?… They last much longer! My veggies from last week were just as crisp and perky as they were the day I brought them home! Probably because they haven’t been kicking around in crates, trucks, or sitting in aisles and on pavement for weeks before they got to me. I strongly recommend growing your own or buying local!
I steamed some more delicious beets n greens, made a huge garden salad with a few types of lettuces, cauliflower, broccolini, carrots, - and used Hakurei for the first time! These are Japanese salad turnips. They remind me of a milder radish. I really like them! I also made a chicken veggie stir fry with the carrots, hakurei, broccolini stems/leaves, White Russian Kale, freshly diced garlic scapes and added some onions/mushrooms. All was cooked up again in the herb infused cooking butter! I used more garlic scapes in my jazzed up tuna salad with some of my favorite Pampered Chef pantry items, Parmesan cheese, pickles, onion, mayo and ranch. This is going to be so delicious in wraps, sandwiches, salads and more! After that- I unboxed this week’s box! I’m so excited for more broccolini, cauliflower, hakurei, garlic scapes, and Pac Choi! I got scallions again this time around *SCORE*! NEW this week are Mini Green & Red Bib Lettuces, arugula & fresh basil! I’m super excited!! What would you make with any of these pretty plants?!
