Using Freeze-Dried Tomatoes

Freeze-dried tomatoes are an awesome pantry staple, offering concentrated flavor and long shelf life. Whether you’re looking to elevate your everyday meals or create something special, these versatile ingredients can transform your dishes.

Creamy Tomato Basil Pasta

This creamy pasta dish is quick to prepare and bursting with flavor, thanks to the intense taste of freeze-dried tomatoes.

**Ingredients**
-3 tbl spoons of ground freeze dried tomatoes
- 1 cup freeze-dried tomatoes
- 12 oz pasta (your choice)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 cup fresh basil leaves, chopped
- Olive oil
- Salt and pepper to taste

**Instructions**

1. 1 cup of freeze dried tomatoes ground in a mortar & pestle or a blender. Then reconstitute another cup of freeze dried Tomatoes.
Soak the freeze-dried tomatoes in warm water for about 15-20 minutes. Drain and chop.

2. Cook Pasta
Cook the pasta according to package instructions. Drain and set aside.

3. Make Sauce
In a large skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté until fragrant. Stir in the rehydrated tomatoes, powdered freeze dried tomatoes and heavy cream. Bring to a simmer.

4. Combine
Add the cooked pasta to the skillet. Stir in the Parmesan cheese, chopped basil, salt, and pepper. Toss until well combined and heated through.

5.Serve
Garnish with more fresh basil and grated Parm

🦀 Crab Crunchies 🦀
I was lucky enough to run across these in another group, and they’re soooo good so I needed to share. 🤤

In a bowl: cut up crab meat (imitation or real will work), coat with oil or melted butter (I prefer butter), season how you like it (I used salt, pepper, onion powder, garlic powder), mix all up until fully coated.

Put in the air fryer at 380 degrees for 8 minutes, open and shake, cook for 8 more minutes, I make a butter and garlic dipping sauce. Done!

Kentucky Butter Cake🤤🤤
Ingredients:
1 cup butter, softened
2 cups sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
Butter Sauce:
1 cup sugar
1/2 cup butter, cubed
1/4 cup water
1-1/2 teaspoons almond extract
1-1/2 teaspoons vanilla extract
Directions:
In a large bowl, cream butter and sugar until light and fluffy.
Add eggs, one at a time, beating well after each addition. Beat in vanilla.
Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition.
Pour into a greased and floured 10-in. tube pan. Bake at 350° until a toothpick inserted in center comes out clean, 55-70 minutes. Cool 10 minutes. Run a knife around edges and center tube of pan. Invert cake onto a wire rack over waxed paper.
For sauce, combine the sugar, butter and water in a small saucepan. Cook over medium heat just until butter is melted and sugar is dissolved. Remove from the heat; stir in extracts.
Poke holes in the top of the warm cake; spoon 1/4 cup sauce over cake. Let stand until sauce is absorbed. Repeat twice. Poke holes into sides of cake; brush remaining sauce over sides. Cool completely.
