Tonight, I let the younger kiddo select the meal! I had tabbed allllllllll the recipes in The Vegan Instant Pot Cookbook by that I want to try, and said, “pick one.”

“Hearty Tempeh Chili” was selected and it did NOT disappoint! I actually wasn’t able to find tempeh at the last minute, BUT found this amazing seitan by !!!
