The Update! Two dedicated GF businesses under one roof = Gluten Free & More Store by Chrisolyn's & Fattyhead. On the low carb, diabetic friendly, protein packed side is Fattyhead GF Protein Keto Crust who’s been operating in Blue Springs as a wholesaler for 3 years and is licensed and ready to go!

On the celiac disease side is the owner of Chrisolyn's Gluten Free Bakery who’s had a shop in Waverly for 13 years and is NEW to Blue Springs. Her license came through TODAY, but she’s still waiting on 2 giant freezers to arrive. Here’s a peek of what we have so far.

What???? On this beautiful Memorial Day, the department of revenue acknowledged receipt of that tax form from 2017. That means we can get our biz license TOMORROW! That means we can OPEN just AS SOON AS we get our POS system set up. Date coming super fast now. Please SHARE!! Xoxo

It was Ball Day in the Fattyhead Kitchen yesterday! Monkey Bread is a go, sweetened with allulose (a rare "sugar" found in figs with only a fraction of calories, and ideal for those with diabetes). And if you're familiar with Kansas City's Taste of Brazil restaurant in the city market, you're probably familiar with their Brazilian Cheese Bread (the green bag in stores all over KC). They are DELICIOUS, but not low carb, so we have a version made with Fattyhead and Cheddar, that is diabetic friendly without sacrificing taste.

All our products will include macros. Fattyhead is a dense, unleavened bread, and VERY filling. It's the protein from almond flour, cheese and eggs that creates such satiating products. You will be surprised how full you get!

Sorry to keep showing you all the goods without an opening date, but we WILL drive to Jeff City this week to nail down that tax form issue that's preventing us from opening. Poor Chrisolyn's Gluten Free Bakery has tried a dozen times to break through and get a human, but is stuck in voice messages that route to chats that then disconnect, time and time again! Who knew this would be the hardest part of opening a store??

Two Types of Crusts. Both Gluten Free. Both Delicious. Chrisolyn's Gluten Free Bakery is a yeast raised crust on the left. Fattyhead GF Protein Keto Crust is an almond flour, cheese, egg-based flatbread on the right, suiting the needs of low carbers, and Chrisolyn's will have Dairy Free options! Do we have everyone covered??

How about The Simply Cheese 8” Keto Take N Bake for $8.75? I thought about adding basil but nope. If you: A. have picky eaters, or B. love to customize at home, or C. are a vegetarian, then this is your canvas.

Fattyhead is a specialty crust made from nothing but almond flour, cheeses, eggs, flax seed and herbs. Extremely low carb, super cheesy and filling, and considered safe for diabetics.

WHEN WILL WE OPEN?? The DOR requested a tax form from 2017. They have it. As soon as they acknowledge that they have it, we can get our Blue Springs license and open the doors! How about that red tape??
