Our meal kits have a new look this year with a convenient grab & go box. We have two kits for the Calumet Farmers Market to make thinking up and executing a meal quick and easy.

SOUP KIT: Leek, carrot, garlic, kale, cress & potato. Chop ingredients up & sauté. Save out a little cress to sprinkle on fresh. Add in your vegetable or chicken stock. Season with salt & pepper. Add in a protein like chicken or beans. Let simmer until everything melds and serve with a little fresh cress in top.

VERDOLAGAS TACO KIT: Verdolagas (purslane), jalapeño, Anaheim, poblano, garlic, onion & cherry tomato. Chop purslane up (stems too) and sauté with chopped peppers, garlic & onion. Season with salt, cumin, coriander & smoked chili pepper. Let reduce and serve in a taco shell with diced cherry tomatoes on top. Purslane is packed with omegas & vitamins! Don’t care for shells? Serve over rice & beans or salad greens.

We are creating an elegant new flavor of sourdough for the upcoming From the Ground Farmers Market Collective Thimbleberry Fest.

Our thimbleberries (picked and dehydrated by my mother🥰), paired with our farm grown rosemary creates an earthy, sweet/tart flavor profile that would be ideal toasted with a dollop of honey butter.

We’ll have these at the Houghton Farmers Market on Tues Aug 18th & at the Calumet Farmers Market on Saturday Aug 22nd. These are the only two markets of season this will be offered and we hope you enjoy this unique bread.

CROP SPOTLIGHT: DANDELION GREENS
So lettuce has been selling like crazy but unfortunately we are between crops. But you can still get your fresh greens! We grow several types of lovely culinary dandelion greens. They are very tender and less bitter then what you would find in your yard and they are packed full of nutrients and flavor.

Don’t let the word bitter turn you away!! It is a flavor that has been bred out of our palate and produce, but it is so good and good for you and it doesn’t take long to love it.

I like to chop up raw dandelion, drizzle a little balsamic over it and then put any steaming hot Italian type dish on top. This softens the greens a bit, adds amazing flavor, a light crunch and again, added nutrients to your dish.

They are also great in salads, Sautéd as a side dish with a little onion, garlic & olive oil or blended into smoothies. We’ll have them at the Calumet market & our farm stand.

After all the news about contaminated lettuce, I hesitated to post. But I don’t want to lead you to believe your locally grown lettuce is bad. Like all small farms around here, we grow our own crops and follow food safety protocols. And our lettuce is beautiful and abundant right now and deserves to be celebrated and enjoyed.

We will be bringing some really nice icebergs to the tomorrow (Saturday) from 10-2. In the world of butterhead (which we do love), let’s not overlook this past time favorite. Crunchy, juicy, mild and versatile.

Use the outer leaves for wraps. Add in your favorite meats, cheeses, pickles and fold into a little package. Then use the head to make a wedge salad. Jake cooked up some bacon and chopped it up. He used a chunk of blue cheese, mashed it and added it to a little buttermilk and Greek yogurt to make the dressing. To assemble, cut the head into four pieces. Lay on a plate & top with the dressing, bacon & sliced red onion.

📣 We know everyone is concerned about the smoke right now and we want to ensure we are keeping everyone as healthy as possible. We have the Calumet Coloseum on hold as an indoor backup plan. We will make a final decision Friday afternoon so that everyone knows where to go on Saturday morning!
