Happy Meatball Monday! Here is a quick and easy recipe for delicious Venison & Pork Belly Meatballs!

Ingredients
2 lbs ground meat (approx. 1.3 lbs venison + 0.7 lbs pork belly)
2 large eggs
1 cup panko breadcrumbs
1 cup shredded carrot (from 2–3 carrots)
½ cup grated Parmesan (optional)
1 small onion, shredded or finely grated
1½ tsp garlic salt (or to taste)
1 tbsp Italian herb blend (oregano, basil, thyme, etc.)
Optional: black pepper or red chili flakes, Worcestershire sauce to taste
Olive oil for brushing (optional)



Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
2. Mix the ingredients:
In a large bowl, combine the ground venison and pork belly, eggs, panko, carrots, Parmesan, shredded onion, garlic salt, and Italian herbs. Mix until evenly incorporated—don’t overwork the mixture or the meatballs can get tough.
3. Shape the meatballs:
Roll into 1 inch balls using your hands or a scoop.
4. Place on the baking sheet:
Space them evenly. For extra browning, lightly brush with olive oil.
5. Bake for 15-18 minutes, or until cooked through and lightly browned. Internal temp should reach 160°F (71°C).
6. Serve:
Toss with your favorite tomato sauce and pasta, serve in subs, or freeze extras for later.

🥓 🧀 Loaded Baked Potato Soup 🥣 🥔 Creamy, cheesy, and packed with all the comfort food vibes you need in a bowl. Bonus: it’s made with raw potatoes (no baking first!) and done in one pot.

Loaded Baked Potato Soup

Ingredients
4 medium russet potatoes, peeled & diced
1 small onion, diced
3 cloves garlic, minced
3 tbsp butter
3 tbsp flour
3 cups chicken broth
2 cup milk
1 cup heavy cream
2 cups shredded cheddar cheese
1/2 cup sour cream
6 or more slices of bacon, diced
Salt & pepper to taste
Optional: chopped green onions, sour cream, frozen corn, any other veggies you want to add.

Directions
1. In a large pot, cook diced bacon until crispy. Set aside.
2. In the same pot, melt butter then sauté onion + garlic for 2–4 mins.
3. Add flour, stir until smooth. Slowly add in broth while constantly stirring.
4. Add potatoes and a handful of frozen corn (optional). Bring to a boil, then simmer 15–20 mins until potatoes are soft.
5. Mash up some of the potatoes to reach desired consistency. (I used the back of the spoon for this but you can use a masher if you’d like)
6. Add milk + cream. Let it get hot but not boil, then stir in the cheese and sour cream.

Season with salt and pepper to taste. Serve hot, topped with bacon, green onions, more cheese, a dollop of sour cream and *a few* slices of sourdough bread for dipping 🤤

Hi everyone! My name is Diana and I am a mom to 3 (sassy) little girls and a crazy black lab named Drake.

A little while back, I got obsessed with sourdough and all things homemade. This year, I would like to challenge myself and try something new and a little bit scary, so I am excited to share my passion for healthy bread and homemade treats with you!

The menu and bake days change from time to time, as I try new recipes and find my rhythm in the kitchen, so follow along this new adventure and send me a message if you would like to order something yummy 😋
