FEATURED CHEESE: Mitica Drunken Goat
This semi-firm cheese is made from pasteurized milk from Murciana goats. The wheels are soaked for 48 to 72 hours in Doble Pasta red wine, a twice-fermented, high-alcohol wine. After curing in the wine, the goat cheese develops a deep violet hue on its rind. Meanwhile the inner paste remains nearly pure white.
TASTE: A very snackable and approachable cheese with a creamy mellow flavor.
PAIRINGS: Fig spread for a fruity finish or marcona almonds for a salty pop. Fruit forward red wine or your favorite bubbly drink.
