St. Hildegard of Bingen about spelt: “ Eating it rectifies the flesh and provides proper blood. It also creates a happy mind and puts joy in the human disposition. In whatever way it is eaten, whether in bread or in other foods, it is good and easy to digest. For anyone who is so sick that he is unable to eat, take whole grains of spelt and cook them in water. Add lard or egg yolk, so might more willingly eat it, on account of the better flavor. Give this to the sick person eat, and it will heal him inwardly, like a good, sound unguent.”

Spelt vs. Wheat
Not only is it richer in nutrients than wheat but we can still obtain this grain in its original form - an ancient grain. Nowadays there are three varieties that have not been cross bred with wheat and they are the ones that provide most nutritional value. They are Schwabenkorn, Oberkulmer and Frankenkorn. While wheat has been bred to lose its husk during harvesting in order to decrease harvesting time and increase yield, spelt is not free threshing. It still requires de-hulling. The spelt kernel is tightly surrounded by a tough outer hull that protects it even from nuclear contamination. Spelt is more costly to grow and process but it also does not need any pesticides and maintains all its nutrients because it remains protected by its outer shell. Last but not least spelt contains gluten but it is of a different molecular make-up than gluten in a wheat grain. Spelt gluten is tolerable even by persons with gluten allergies. With its wide array of minerals, vitamins and almost perfect water solubility, spelt is easy to digest, helps regulate metabolism, improves blood circulation, boosts the immune system, lowers blood sugar and reduces bad cholesterol levels.
It is worth remembering that spelt absorbs less water than wheat. So remember to either add less liquids to your recipes, or add more flour than while baking or cooking with wheat.
