Zucchini Parmesan Bread
Ingredients:
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 teaspoon garlic powder
• 1/2 teaspoon dried oregano
• 1/2 teaspoon dried basil
• 1/4 teaspoon black pepper
• 2 large eggs
• 1/3 cup vegetable oil
• 1/4 cup milk
• 1 cup grated Parmesan cheese
• 2 cups shredded zucchini, squeezed to remove excess moisture
Directions:
1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, oregano, basil, and black pepper.
3. In a large bowl, beat the eggs. Add the vegetable oil and milk, mixing until well combined.
4. Stir in the grated Parmesan cheese and shredded zucchini.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
6. Pour the batter into the prepared loaf pan and spread it out evenly.
7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
